• Pink Oyster

The Pink Oyster Mushroom (Pleurotus djamor ) produces wonderfully pink caps. With their mild taste and meaty texture Pink Oyster mushrooms are perfect for as a meat substitute for vegetarians. I like to pan fry them whole in cluster form for steaks or chopped up for stir frying and sautéing. Its sweet and earthy taste makes it a great companion with seafood and meat dishes.

I like to harvest before they reach full maturity to increase their nutrients, flavour and shelf life.

In recent developments within scientific studies, they have found that Oyster mushrooms produce Lovastatin naturally which is a drug used in treating excessive blood cholesterol. They are also known to have incredibly high levels of the antioxidant, ergothioneine, widely known to decrease inflammation within the body and lower the risk of cardiovascular disease.
